SWISS POTATOES

YIELD: 6 SERVINGS

1-1/2 lbs. whole potatoes,
   sliced 1/4” thick
1/4 lb. margarine

 

  BAKE TIME/TEMP: 1 HOUR. 325° F.

5/8 lb. mushrooms
1/2 lb. Swiss cheese, slices
1/8 c. chopped chives

 

Butter the bottom of a 2”-deep pan. Spread 1/2 of the potatoes, 1/2 of the mushrooms, and 1/2 of the Swiss cheese in the pan.

Drizzle melted margarine and then repeat.

Cover the pan and bake for 1 hour at 325° F. until potatoes are tender. Let pan set for 15 minutes and cut in squares. Garnish with chives.
