GLORIAS SWEET 'N SOUR CHICKEN
Chicken Simmered in Red Wine with Shallots & Mushrooms

| YIELD: 6 SERVINGS
3 whole boneless chicken breasts
1 20-oz. can crushed pineapple
4 c. Russian dressing
2 T. poppy seeds

COOK TIME/TEMP: 1-1/2 HOURS. 350° F.
2 green peppers, chopped
2 red peppers, chopped
1 bunch scallions, chopped

Combine crushed pineapple with 2 c. of the Russian dressing and poppy seeds. Set aside.
Cut chicken into 1/2" strips. Combine with chopped green and red peppers and scallions.
Layer sauce and chicken in baking dish. Pour remaining sauce and Russian dressing over top of chicken.
Bake at 350° F. for 90 minutes.
SERVING SUGGESTIONS:
Serve with fluffy white rice and salad.
HELPFUL HINT
If you insert a toothpick between the cover
and the saucepan, you will prevent boilovers! |
