| YIELD: 16 SERVINGS
2 3-oz. pkgs. ladyfingers
1 8-oz. pkg. light cream cheese,
softened
1/4 c. skim milk
1 c. diet chocolate pudding mix
1 tsp. vanilla extract

COOK TIME/TEMP:
40 MINUTES. 400° F.
1/2 c. dry white wine
1/2 lb. cooked fresh or canned
crabmeat
1/3 c. parsley, finely chopped
1/3 c. fine bread crumbs
4 oz. shredded Swiss cheese
salt and pepper

Line pan with ladyfingers. Place rows lengthwise across the bottom of the pan. Cut remaining ladyfingers in half crosswise. Place halves around the outside edge of the pan, rounded sides out.
Place cream cheese in large mixing bowl. Add 1/4 c. skim milk. Beat with an electric mixer at low speed until smooth and no lumps of cream cheese remain.
Add pudding mix, extracts and the 3-3/4 c. skim milk.
Beat for 3 minutes longer at low speed until well blended.
Prepare whipped topping. Fold into mixture
Pour pudding mixture into ladyfinger-lined pan.
Cover and refrigerate until set.
HELPFUL HINT
By placing aluminum foil beneath the napkin
in a bread basket, rolls and breads that
are fresh from the oven will stay warmer at the table. |
